Rockville location is chain’s first in the county

Cooper’s Hawk Winery & Restaurants will open at the Research Row development in Rockville on Monday.

The casual restaurant and wine bar is the Illinois-based group’s 36th location overall, and second in Maryland. It joins a Chick-fil-A and a Onelife Fitness just west of Interstate 270 on Route 28 at the retail shopping center.

Chef Eddie Maldonado will move from Cooper’s Hawk Reston to the Rockville location to lead the kitchen. The contemporary American menu matches dishes with wines, as suggested by the winemaker.

Dishes include pan-roasted barramundi with blistered green beans and ginger rice, paired with a Chardonnay; shrimp and scallop risotto with sweet corn and asparagus, paired with Cooper’s Hawk Lux Sparkling; and ginger soy glazed New York strip with wasabi-buttered mashed potatoes, paired with Cooper’s Hawk Lux Cabernet Sauvignon.

Cooper’s Hawk features an indoor dining area accommodating 301 guests, plus a covered patio seating 50 customers. A Napa-style tasting room and retail space stretches across the front of the restaurant.

The location was designed by Illinois-based Aria Group Architects Inc., which used elements of the surrounding area to create the space.

“Drawing on the restaurant’s proximity to the Technology Corridor, the geometry seen in various fabrics and light fixtures hints at the biotechnology industries prevalent in the area,” Aria Group designer Stephanie Cole said in a statement. “With ample views to the outdoors, the private dining room pairs calming blue hues with warm-toned wood ceiling beams.”
