Chef José Andrés is continuing to expand his restaurant empire—this time with a new Beefsteak at Westfield Montgomery mall in Bethesda.
The chef behind regional institutions such as Jaleo and Zaytinya first unveiled the fast-casual vegetarian concept in March 2015 with a location in Foggy Bottom in Washington, D.C. Since then, the restaurant’s concept, which includes such offerings as quinoa bowls and beet sandwiches, has expanded and the chainlet now has a Dupont Circle location as well as new restaurants opening in Tenleytown and at the University of Pennsylvania in Philadelphia this spring.
The Bethesda location will be the company’s fifth. The new restaurant is expected to open this summer in the mall’s dining terrace, according to the mall.
The concept, which takes its name from the beefsteak tomato, centers on combining fresh vegetables in a variety of ways. The menu offers a make-your-own bowl that customers can build in the now-ubiquitous assembly line fashion favored by so many fast-casual restaurants. The restaurant also offers a variety of “Our Favorite Bowls,” including the Eden—quinoa, snow peas, edamame, green beans, asparagus, broccoli, cilantro, roasted garlic yogurt sauce and romaine topped with cucumber salad, scallions, sprouts and toasted sesame seeds for $8.49—or the Kimch-wa—rice, corn, carrot, cabbage, edamame, bok choy and roasted garlic yogurt sauce topped with toasted sesame seeds, corn nuts, kimchi and soy ginger dressing for $8.49.
There are protein options as well—customers can add a poached egg, chicken, or salt-cured salmon to their orders for an extra $2 to $4. And for those who don’t want a vegetable bowl, there’s the hamburger-like “BEETsteak sandwich” that is made with a marinated beet, pickled red onions, sprouts and chipotle mayonnaise, which is served on a brioche bun for $5.99.
