Persimmon, Wild Tomato Owners to Open New Restaurant

Indigo House to feature Asian-inspired fare just three doors from Wild Tomato

Damian and Stephanie Salvatore, owners of the popular Persimmon and Wild Tomato restaurants, are planning to open their third eatery, Indigo House, featuring “Asian-American cuisine,” just three doors away  from Wild Tomato in a Cabin John shopping center.

The restaurant will be small—measuring 1,750 feet—and will have a patio, Stephanie Salvatore said. The decor “won’t scream we are an Asian restaurant,” she said, but will be a mix of rustic and urban, with murals designed by local artist Diana Cruz. And yes, the color scheme will have plenty of indigo.

Indigo House will replace My Sushi, whose owners retired. Salvatore said she and her husband decided to open an Asian-themed restaurant because they wanted to keep the same balance of eating options that had existed in the strip mall where Wild Tomato is located. “We’ve all existed together for so long,” she said. “You don’t fix what’s not broken. The clients have choices. If you don’t feel like having a hamburger and you feel like having sushi, it’s there.”

The menu will feature sushi, spring rolls, hibachi-grilled meats and seafood and other food inspired by Asian flavors. Wasabi-crusted oysters, a favorite on the Persimmon menu for 15 years, will probably find a home on the Indigo House menu, she said.

Damian Salvatore, who is the executive chef of the couple’s restaurants, is developing the dishes and menu. “Damian likes Asian spices and flavors,” Stephanie Salvatore said.

Salvatore said she and Damian hope to make the menu healthier—using less sugary sauces—than those at many Asian restaurants and to keep the prices down. They’re aiming for entrée prices between $8 and $22, about the same as those at Wild Tomato.

“I have a family of five and I find it very difficult to take everybody out for dinner because it’s expensive,” she said. “I’m a mom. I work hard. I think everybody should go out to dinner once a week. It doesn’t have to break your budget.”

Indigo House will serve lunch and dinner daily. An early fall opening is planned.
