Inside Food, Wine & Co.

Phew, it’s been a long road. But Food, Wine & Co., the new bistro on 7272 Wisconsin Ave., looks like it’s finally going to open the week after Labor Day. On Sunday, I checked in with Executive Chef Paolo Buffa and Chef de Cuisine Kyle Christy, who are testing dishes right now, so get ready for items such as sweet corn soup and burgers with shallot marmalade on homemade brioche. It’s taken nearly a year for the restaurant—which replaces the longtime Uno Chicago Grill next to the Regal Bethesda 10 movie theater—to get up and running. I’ve been following the progress of the place from the get-go, and will be writing an article about it for the November/December issue of Bethesda Magazine. Your kitchen renovation might have been a pain, but opening a restaurant is major surgery.
